Minnie Adkins is the “grandmother” of Kentucky folk art, having devoted her life to carving, painting and helping other artists. Her artwork depicts her life in “Happy Gizzard Holler” in eastern Kentucky, and she specializes in carving and painting native animals such as the horse, rooster, fox and opossum
